Also known as Canestrello, the Rusetta* is a typical biscuit of the Ligurian inland around Genova that is traditionally baked and consumed on special occasions like weddings and feast days.

With a soft, mealy crumbliness and a pleasant lemon scent the Rusetta is the perfect little treat for those longer and sunnier days of Spring.

Our vegan re-interpretation is low on sugars and made out of a mix of chickpea and wheat flour for a better protein/carbs ratio.

*The name of this biscuit is also the subject of a heated debate! For the general public it's "Canestrello" but historical evidence says otherwise: the original Canestrelli were bread rings topped with melted sugar that predated the first mention of Rusette. The "identity-theft" seems to have happened since the end of the 19th century for, yet, unknown reasons.

Ingredients: unbleached flour - bio chickpea flour - vegetable margarine (no palm oil, hydrogenated fats free) - cane sugar - hand-grated bio lemon zest.
